Caramel Marshmallow Crispy Treats

Earlier this summer, my sister-in-law brought these gooey delicious treats to a family celebration. You can only imagine how quickly they disappeared from the platter! And today's your lucky day, because she said I could share her Caramel Marshmallow Crispy Treat recipe (she calls them Goofballs) with you.


The Caramel Marshmallow Crispy Treats pictured here were made with the Red, White and Blue Special Edition Rice Krispies. (Ooh, maybe I need to make another patriotic batch for the Opening Ceremonies of the Olympics tonight!) But this recipe tastes just as good year-round.

Ingredients for Caramel Marshmallow Crispy Treats

  • 1 small can (14 oz) sweetened condensed milk
  • 1/4 cup shortening
  • 1 package caramels
  • Rice Krispies cereal

Melt caramels, shortening, and sweetened condensed milk in a double boiler.

One by one, dip large marshmallows in the caramel mixture and roll in rice cereal. Place on wax paper to set up a bit before storing. If the caramel mixture starts to stiffen before you are done, throw it back over the double boiler for a minute or two. (Tip: keep a wet towel, knife and fork handy as it will make them easier to work with.) Makes 4 dozen.

Store covered. They'll stay fresh for several days (not that they last that long at my house!)
